2 bags bib lettuce
1 lb lean ground beef or ground turkey breast
1 can white mexican corn
1 can low sodium black beans, rinsed
1 cup salsa
1 tsp cumin
1 tsp red pepper flakes
1 tsp garlic powder
1/2 cup reduced fat Mexican cheese
6 Tbsp reduced fat sour cream
Cook ground beef or ground turkey in a skillet on medium heat until completely browned. Add cumin, red pepper flakes, and garlic powder and stir until mixed together. Reduce heat to low heat and add salsa, beans, and corn and let simmer for about 5 minutes. Put two cups of the bib lettuce onto a plate and place meat and beans mixture on top of lettuce. Top with 1 tbsp sour cream and sprinkle with cheese. Enjoy!

**Want to go vegetarian? Remove the meat and add one can of low sodium pinto beans, and 1 can of fat free refried beans. Heat in your skillet and add in all other ingredients.
