Best Meal EVER
Chicken, Ranch, Bacon, Broccoli, Mac n’ Cheese
Ingredients:
1 onion, chopped
8 oz uncooked whole wheat elbow macaroni
3 slices of turkey bacon, crumbled
8 oz boneless, skinless chicken breast, cut into cubes
1 Tbsp smart balance butter
1 Tbsp all purpose flour
1 1/2 cups skim milk
1 cup broccoli
1/3 cup healthy choice cream of mushroom soup, low sodium
3-4 oz shredded Italian cheese, reduced fat
1/2 tsp garlic powder
1/2 tsp fresh dill, chopped
1/2 cup colby jack cheese, shredded
Preparation:
Cook pasta according to directions and drain. Cook bacon in toaster oven on broil for about 5-8 minutes or until to your crispiness. Set aside when finished cooking. Chop onion and place in skillet. Cook onion for about 5 minutes, then add the cubed chicken breast. Saute for about 8 minutes or until done.
Preheat broiler.
Melt smart balance butter inn a large saucepan over medium heat and sprinkle with flour. Cook for a few minutes while stirring with whisk. Combine the milk and soup into separate bowl and whisk together. Gradually add milk mixture to saucepan. Bring to a boil and cook until it starts to get thick (sometimes I have to add a little extra flour to make sure it is thick enough). Remove from heat and let the sauce cool for about 5 minutes. Add italian cheese,garlic powder, dill, and stir until the cheese melts. Add in 2 slices of crumbled bacon, broccoli, pasta, and chicken.
Coat large baking dish with cooking spray. Pour mixture into large baking dish. Top with 1 slice of crumbled turkey bacon and colby jack cheese. Broil for 3-5 minutes so that cheese melts (watching it closely so doesn’t burn).

This morning I wanted something to cook ahead so I thought I would try fixing this. Not only was excellent but there is plenty leftover for tomorrow night.
Is there an alternative to broccoli in this? Unlike my little sister, broccoli makes me gag.
Yes, here is your solution: don’t add in the broccoli at all. Just eat a spinach salad with your meal. Gag reflex solved!
