Breakfast in Bed

healthy banana breadAhhhhh……it’s finally FRIDAY!  What better way to start your weekend than with breakfast in bed.  Okay, well, you might not actually get the breakfast delivered to you in bed, but at least you can semi-make everything ahead of time so that it will be ready for you to indulge on Saturday morning without much preparation.  We are going to make a “Fit” Mocha, Banana Bread, and pepperoni and eggs.

“Fit” Mocha

12 oz coffee

1 Tbsp Organic/Natural Creamer

1 Tbsp hot chocolate powder

1 packet of Truvia

Banana Bread

4 very ripe bananas

1 cup all purpose flour

1/2 cup whole wheat flour

1 cup white sugar OR 1/2 cup splenda/truvia

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1 egg

1 cup applesauce

Preparation:

Mash bananas in a bowl

Add all other ingredients and mix well

Pour into 2 greased loaf pans

Bake at 350 degrees for 50 to 60 minutes, or until toothpick inserted into center of bread comes out clean

* You can also add chopped apples, walnuts/pecans, dried cranberries, or fresh blueberries.

Pepperoni & Eggs

8 turkey pepperoni, cut into quarters

1/2 cup egg beaters, southwestern style or plain OR 1 egg, 1 egg white, and 1 tbsp milk beaten

1/8 cup cheddar cheese, shredded

Preparation:

Cook pepperoni on medium heat in skillet for about 5 minutes.  Turn heat down to medium-low and add egg beaters or egg mixture.  Scramble pepperoni and eggs for approximately 3 minutes or until the eggs are to your liking.  Top with cheese.

Garnish with 1/2 Ruby Red Grapefruit
