Chicken Sausage Lentil Stew
It is not quite fall but I was craving soup on this mild 95 degree South Carolina day. I was trying to come up with something that was light, using some summer veggie. Tomatoes and Basil seemed like the perfect combo for the flavors of this soup.
1 lb mild Italian chicken sausage, ground
1 onion
6 garlic cloves
8 cups chicken broth
2 cans 14 oz diced tomatoes
1 8oz can tomato paste
3 cups fresh spinach
1.5 cups organic green lentils
1 tsp oregano
2 bay leaves
10 fresh basil leaves, chopped
salt, pepper to taste
top with fresh cherry tomatoes and basil
Brown sausage for about 5-7 minutes and then cook onions and garlic for anotherĀ 5 minutes. Add rest of ingredients and bring to a boil. Then simmer for about an hour. I served this with crusty bread and apple slices. The kiddos ate this up! They loved it.
