Chili Down South
My husband and I live in good ole South Carolina where college football is what you do on Saturday. ESPN sports center stays on the TV all day and we just do things around the house while football is on…..until our team plays, of course! So this past Saturday, my Auburn tigers played in their first game of the season and I wanted it to feel like Fall. I decided to make some chili and have friends over for the game. I even wore jeans (mind you it was 98 degrees when I walked outside!). I guess it was just wishful thinking on my part but I am really looking forward to AND wanting some cooler weather that is not so humid. We cranked down the air conditioner and enjoyed our chili.
Make it this weekend for your favorite football team game. It really was a HIT!
Chili Down South Recipe:
1 lb leanest ground beef1 lb lean ground bison1 onion, chopped3 16 oz can diced tomatoes8 oz can tomato paste1/2 bottle blue moon beer1 Tbsp chilli powder1 t dried oregano3 t ground cumin2 t dried basil1 oz 85% dark cocoa chocolate1/4 cup reduced fat cheddar cheese1 bunch green onions, chopped
Put in the crock pot on low for 5-6 hours. Stir every few hours if you are around. Top with green onions and 1 TBSP cheddar cheese. It was easy and delicious!!!!
