Creamy Chicken Enchiladas
By now you can probably tell that I LOVE Mexican dishes. The meals are always flavorful and so easy to make healthy. I also love the fact that most of my Mexican-style meals take very little time and are best of all, cheap!
It’s Saturday night and you are having friends over for some dinner and drinks. Pair this tasty dish with my “FIT margarita” from the low calorie adult beverages section. Add some games and fun and you have a great night ahead of you.
Ingredients:
1 lb chicken breast, boiled and shredded
1 onion, diced
1 Tbsp ground cumin
1 Tbsp chili powder, mexican style
1 can fat free refried beans
1 can black beans, drained and rinsed
8 whole wheat tortillas ( ~80 calorie per tortilla)
1 15 oz can enchilada sauce
1/4 cup Mexican cheese, reduced fat
1/2 cup fresh cilantro, chopped
Preparation:
Heat oven to 350 F. Boil chicken breast on medium heat for about 15 minutes or untile chicken is no longer pink. Pull the chicken out of the water and set aside to cool. Dice the onion and place in skillet. Spray skillet with Pam and cook for about 5 minutes or until soft. Add ground cumin and chili powder and stir. Pull onions off burner and set aside. Start shredding the chicken and place into the skillet with the onions. Once all of the chicken is in the skillet, place the skillet on low heat. Add 4 Tbsp of the enchilada sauce and stir. Add refried beans and stir. Add black beans and stir.
Spray a cookie sheet with pam so that the tortillas don’t stick. Place about 1/4 cup of the mixture into each tortilla and roll into what looks like an enchilada. Fill 8 and place each side by side. Drizzle each tortilla with 1 Tbsp of enchilada sauce. Bake in the oven for 12 minutes. Top each enchilada with the cheese and place back in the oven for another 2-4 minutes until the cheese melts.
Garnish each tortilla with cilantro, 1 Tbsp fat free sour cream or low fat greek yogurt, and 1 Tbsp salsa.
Serves 8. Each enchilada is approx. 335 calories…not including the garnishes.
This was a wonderful dish and as you said very very easy to prepare; with just two of us there is plenty for another meal-THAT is the best news!
