Crock Pot Parm Chicken
Again, I am using my crock pot for any and everything I can think of. My husband actually gave me a challenge: Use the crock pot for each meal we make for the next month. I started two weeks ago with the honey parmesan pork tenderloin, then made BBQ chicken, and this week I am making mashed potatoes and chicken parmesan in the pot. All healthier versions, of course!
The crock pot is so easy for me these days. I love it and am happy to take on this challenge. Oh yeah, I just have to use my crock pot for something from each meal…..it does not have to be the main course.
Crock Pot Chicken Parm:
Ingredients:
3-4 chicken breasts
2 slices provolone cheese/mozzarella cheese, reduced fat
1/4 cup parmesan cheese
1/2 cup Italian bread crumbs
1 tsp Italian seasoning
1 garlic clove, chopped
1 jar pasta sauce (my favorite is the tomato basil from trader joes)
non stick cooking spray
Prep:
Spray your pot. Beat the one egg in a small bowl. Mix together the bread crumbs, parm cheese, and italian seasoning onto a plate. Dip chicken breasts into egg, then into bread crumb mixture and place on the bottom of the pot. Top with provolone cheese. Top with 1 1/2-2 cups of pasta sauce. Place on high for 5-6 hours.
