Friday Night Stuffed Cheesy Burgers & Fries
Friday night is usually a night that I like to use as my “cheat” meal. My husband and I usually go out for dinner. However, we have recently decided that saving money and calories is a better way to go! We enjoy having friends over and cooking dinner and playing games. Last weekend, we had some friends over and we decided that burger and fries sounded like they would be a hit with these newly found friends out here in Jackson Hole. We started the grill, turned up the music and got to cooking. The meal does not take very long to prepare or cook. Our guests were able to enjoy time talking with us and they enjoyed the delicious stuffed burgers and fries.
After our meal, we needed something to cure our sweet tooth, so we made s’mores. Yep, you heard me right…..the chocolatey, gooey, graham cracker goodness. We ate one half of a hershey bar, 1 marshmallow, and one graham cracker sheet broken into two. Try this dinner to impress your friends and keep their waistline coming back for more.
Ingredients:
Stuffed Cheesy Burgers:
1 lb 96/4 lean ground beef
4 slices American cheese or Gouda cheese (we used reduced fat)
Garlic Fries:
6 small baking potatoes
2 Tbsp Olive oil or canola oil
1 Tbsp garlic powder
2 Tbsp parsley flakes
Prepare:
Pat out 8 patties (same size) and then place one slice of cheese (fold into 4’s so it is a small cube) in the middle of 4 of the patties. Then you will place the cheese-less patties on top of the patties with cheese. Use your fingers to seal the cheese inside the burger meat. Cook the burgers on medium heat for about 4-5 minutes per side. Your burger will be medium with a tiny bit of pink in the meat.
Preheat oven to 400 F. Slice each potato into 1 inch thick french fries. Once they are sliced, place them into a gallon sized ziploc bag and add your garlic powder and oil and shake until the fries are coated. Place potatoes on cookie sheet (will need two) and lay them out so they are not overlapping. Cook for 15 minutes and then flip the fries. Cook another 15 minutes or until desired crispiness.
Condiments:
4 whole wheat buns (80-120 calories per bun)
1/2 bag baby spinach or field greens
1 tomato, sliced
1 onion, sliced
Reduced sugar ketchup
Spicy mustard
Serve each person a dill pickle spear
Approx 450 calories for the burger and fries. A much better number compared to McDonalds, Burger King, or Five Guys. You don’t have to feel guilty anymore about eating a burger or fries……AND they taste better!
