Garlic Ranch Pork Chops
Have I told y’all lately how much I LOVE my crock pot? It is so easy to throw things into and just leave all day. It makes delicious meals with hardly any prep time at all! Makes my life easier and allows me more time to spend with my newborn.
For our Valentines dinner, I made Garlic Ranch pork chops over mashed potatoes and served with a side of broiled asparagus. It was a huge hit!
Garlic Ranch Pork Chops
Ingredients:
4 (1/2 inch thick) pork chops, fat trimmed off
4 garlic cloves
1 can cream of chicken soup, 98% fat free low sodium
1/2 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 Tbsp dill, dried
4 thin slices of procuitto (should be paper thin)
Prep:
Mix together soup, chili powder, garlic powder, onion powder, and dried dill and then pour into crock pot. Place pork chops into soup mixture and flip so that you coat both sides. Place one garlic clove on top of chop and then place one slice of procuitto on top of garlic clove. Cover and cook for 5 1/2 hours on low.
Serve on top of mashed potatoes, whole grain rice, or whole wheat cous cous. Make sure to have a side of greens with it. Enjoy.
