A Fresh, Light, Dinner
With these HOT days and HOT nights, I don’t even feel like cooking or eating a big heavy meal. So…….last night after running stadiums, I decided to use up some of the fresh veggies & herbs I had and make a light pasta dish. This is what I did:
Chicken, Basil, & tomato Pasta Fresca
12 oz of chicken, broiled or grilled, then diced
6 oz whole wheat pasta
1/2 cup green onions, chopped
1/2 cup fresh basil, chopped
2 large homegrown tomatoes (mine were Johns Island…..Yum!), diced
1 Tbsp oregano
1/2 tsp red pepper flakes
1 Tbsp Olive oil
1/2 cup reduced fat Italian Cheese
Mix everything together into the pot you cooked your pasta in and let sit for about 5 minutes over low/medium heat. Serve and top with 1 Tbsp Italian cheese. Serves 3.
**Can substitute chicken with shrimp, pork chop, or salmon.
