Herbed Pork Tenderloin & Artichokes
Herbed Pork Tenderloin: (serves 4)
Ingredients:
1 lbs pork tenderloin
1/3 cup low sodium soy sauce
1/3 cup worcheshire sauce
1/3 cup bourbon
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried rosemary
Prep:
In a baking dish, place your tenderloin in the middle. Mix together soy sauce, worcheshire, and bourbon in small bowl. Pour mixture over the top of tenderloin. Hand mix your herbs. Top with herbs.
Lemon, Butter Artichoke
Ingredients:
4 Whole Artichokes
1/2 Lemon
2 Tbsp Smart Balance butter
4- 1/2 tsp minced garlic
water
Prep:
Melt butter in microwave safe bowl. Add the juice from 1/2 lemon to the butter and stir. Place each artichoke into bowl and pour water into the bowl so that the stem of the artichoke is covered. Pour 1/4 of the butter mixture over the top of the artichoke. Top the artichoke with 1/2 tsp of minced garlic. Cover bowl with ceran wrap and microwave on medium high for 12-15 minutes.
