Italian Chicken and Vegetables with whole wheat orzo
8 oz whole wheat orzo
Non stick spray
16 oz chicken breast
¼ cup Italian dressing, reduced fat
1 medium onion, chopped
1 zucchini, sliced
1 carton cherry tomatoes
½ carton baby portabella mushrooms, sliced
Pepper
¼ cup reduced fat feta cheese
Spray a large skillet pan with Pam or olive oil. Place your chicken breast and chopped onion into a large skillet. Add ¼ cup Italian dressing and cover. Let simmer on low for about 1 hour until chicken is finished cooking. Cook your orzo according to package directions. Add your zucchini, tomatoes, and onions, to your chicken and onions and cover. Let sit for 5-8 minutes until the vegetables are soft. Take your chicken breast out of the pan and cut into small cubes. Drain the orzo into a colander. Add the chicken breast back into the skillet with the vegetables and juices. Add the orzo to the chicken and vegetable mixture. Serve in bowls and top with pepper (to taste) and feta cheese. Serves 5.
