Lentil & Sausage Soup
This lentil & sausage soup is easy and delicious! I put it into my crock pot early this morning and just let it cook. It is a great meal for lunch or dinner because it is light but very filling and FULL of nutrients!
Ingredients:
12 oz chicken sausage (i used jalapeno chicken sausage, you can also use herb & garlic)
1 lb dried lentils
8 cups of water
1 Tbsp olive oil
1 Tbsp vinegar
2 cups shredded carrots
1 medium onion, chopped
2 garlic cloves, minced
14 oz can low sodium diced tomatoes, undrained
1 tsp chili powder
1 tsp italian seasoning
1 bay leaf
1tsp dried oregano
Fresh Parsley
Prep:
Rinse lentil beans and pour into crock pot. Add 8 cups water and everything else except the chicken sausage. Set your crock pot on low and cook for 3-4 hours. Dice chicken sausage and add to crock pot and continue to cook for another 1 hour. Top each serving with a few sprigs of parsley for looks. Serve with spinach salad, asparagus, or green beans.
