Longing for Coastal Food
Ever crave sun, sand, and a good ole lobster roll? Most people do not have the luxury of living on the coast and being able to eat fresh seafood on a daily basis. I am going to give you two recipes that will make you think of your favorite beach spot. Just add a bucket of sand, salt water bath, and open your windows for a true ocean feel.
Lobster Roll with Lemon zest
Ingredients:
1 lb cooked lobster meat (if you can’t get fresh lobster, try the vacuum sealed at your seafood counter at the grocery)
1 1/4 cup olive oil mayonnaise
1/2 lemon juice, freshly squeezed
1/2 tsp fresh black pepper
1 Tbsp paprika
1 tsp garlic powder
5 whole wheat hot dog buns
Romaine lettuce head, washed and cut into strips
Prep:
Toss the lobster with mayonnaise, lemon zest, lemon juice, paprika, garlic powder, and pepper in medium bowl. Divide the lobster mixture and lettuce evenly among the hot dog buns. Enjoy!
Crab Cakes w fresh grilled corn and tomatoes
Ingredients:
1 pound fresh lump crab meat (or get it from your seafood counter)
1 egg, whisked
1/2 cup chopped scallions
1 Tbsp dijon mustard
2 Tbsp olive oil mayo
1/2 Tbsp fresh pepper
2 Tbsp whole wheat breadcrumbs
2 Tbsp olive oil
Prep:
Combine crab, egg, scallions, mustard, mayo, and pepper in a bowl. Add breadcrumbs to crab and pack together so that they are formed into cakes. Refrigerate the cakes for 30 minutes before cooking. Heat a nonstick skillet over medium high heat for 2-3 minutes and add oil. Add cakes and let cook until golden brown on one side, then flip and let cook until golden brown on the other side, which will be about 5 minutes on eat side.
2 cakes per person which is approximately 300 calories.
