Honey Blue Moon Chicken
I made this chicken for dinner last night and it was very easy to make and only took 30 minutes from beginning to end. Hope you enjoy this low cal dish as much as we did.
Honey Blue Moon Chicken
2 teaspoons canola or sunflower oil
2 8 oz chicken breasts (I like the Smart Chicken or Perdue fit n easy)
1/4 tsp ground black pepper
1/8 tsp salt
3 TBSP shallot, chopped
1/2 cup blue moon or other strong wheat beer
2 TBSP soy sauce, low sodium
1 tsp light brown sugar
1 TBSP orange juice, fresh squeezed or tropicana 50 light juice
1 TBSP local honey
Heat skillet over medium high heat. Add oil to pan and sprinkle chicken with salt and pepper and add to skillet. Saute chicken for about 8 minutes each side and then remove from pan and keep warm. Add shallots to pan and cook about 1 minute or until soft. Combine beer, honey, soy sauce, orange juice, brown sugar in a bowl and stir with whisk. Add mixture to pan with shallots and bring to boil. Sauce will thicken after about 3 minutes. Return chicken to pan and coat with sauce. Top with shallots. Serves 2. Serve with sweet potato and spinach salad.
Calories- approx 300 for chicken breast and 2 TBSP sauce, 6 g fat
