LowFat Eggnog
Are you one who enjoys a cold glass of Eggnog during the holidays? Do you know that the original version has 343 calories and 19 grams of fat for just 8 oz!!?!!? That is insane. Try this healthier version for about half the calories and almost no fat.
Eggnog Drink:
4 cups skim milk
1 (12 oz.) can evaporated skim milk
1 (8 oz.) carton frozen egg product, thawed
1/2 c. sugar
1/3 c. light rum (opt.)
1 tsp. vanilla
Cook and stir skim milk, evaporated skim milk, egg product and sugar over medium heat about 10 minutes or until slightly thickened. Do not boil. Stir over a bowl of ice water. Cover and chill 4 to 24 hours.
Stir in rum and vanilla. Stir in additional skim milk until desired thickness. Sprinkle each serving with ground nutmeg. Serve with cinnamon stick stirrers. Makes 12 servings.
