Mama Mia Stuffed Shells
Who doesn’t love a good Italian meal? And who doesn’t love a good Italian meal that is quick and healthy? I know I do! That is why I am sharing my favorite quick and easy Italian dish with all of you at BarBelles At Home.
Meat, Cheese, & Spinach Stuffed Shells
12 oz whole wheat Jumbo shells
1 egg, beaten
1 small onion, chopped
1 container (15 oz) fat free ricotta cheese
2 cups spinach
1 lb 96/4 ground beef
1 cup part skim mozzarella cheese
1/2 cup fresh parsley or 2 Tbsp dried parsley
1/4 cup fresh basil
3 cups Classico Garlic Tomato sauce
1/4 cup parmesan cheese
Cook shells for about 15 minutes. While pasta is cooking, chop and sauté onion with cooking spray or olive oil in medium pan for about 2-3 minutes. Add in the ground beef and brown until no longer pink. Drain pasta and set aside. In a medium bowl, beat eggs lightly. Then stir in ricotta, Mozzarella, spinach, parsley, 1/2 of the quarter cup basil. Once cheese and herbs are mixed together, stir in onions and meat. Spoon meat and cheese mixture into each shell and arrange shells on baking dish. Top with tomato sauce and sprinkle with parmesan cheese and remaining chopped basil. Bake at 350 for 25 minutes.
