Mexican Pizza
Another Mexican dish in the books! This one happens to be a pizza with a twist. Instead of your regular pepperoni, sausage, and ham pizza, try this lower calorie mexican style pizza. It is quick, easy and fun for the whole family to make together.
Whole wheat pizza crust-thin (I use Bobolli)
1 can Fat free spicy refried beans
1/2 lb Lean ground beef (96% fat free), browned and drained
1 4 oz can green chilies
1 onion, chopped (purple or white)
1 tsp cumin
1 tsp onion powder
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1 packet reduced fat Mexican cheese (Sargento)
1 tomato, diced
1/2 avocado, sliced
1/2 cup fat free sour cream
1/2 cup shredded lettuce
jalapenos, to your liking
Heat oven to temperature according to the pizza crust. Brown your ground meat in a skillet on medium heat. Mix cumin, cayenne, onion powder, and garlic powder together. Add to the meat as it is cooking. Add in your diced onions and green chilies about half way through browning the meat. When finishing cooking, drain and then set aside. Place the pizza crust onto a cookie sheet. Top with refried beans and meat mixture. Top with mexican cheese and bake in oven for 10-12 minutes. Pull pizza out of oven and top with diced tomato, avocado, lettuce, and dollops of sour cream. Top with jalapenos if you like some spice. Cut into 6 slices. Each slice has about 400 calories…..but one slice will be all you need!
