Quinoa Mac N Cheese w broccoli
This is a healthier version of that creamy, gooey mac n cheese that everyone loves. Instead of loading it up with fat and calories, we load this version up with protein and antioxidants and whole grains. It’s a perfect side dish to some crock pot bbq chicken.
Ingredients:
2 tsp olive oil
1 cup chives, diced
1 1/2 cups quinoa, rinsed and drained
1 tsp Tony Chacheries (no salt added) salt
2 cloves garlic, minced
2 large eggs, whisked
1 cup skim milk (I like Smart Balance b/c it is a tad creamier)
1 cup steamed broccoli
1 1/2 cups grated Cheddar or Gouda cheese, more for sprinkling
Prep:
Heat oil in medium saucepan over medium heat. Add green onions; cover and cook 5 mins or until tender. Stir in quinoa and garlic, and cook, uncovered, 3-4 mins, or until grains start to turn color……they will not be completely cooked.
Add 3 cups water and season with Tony Chacheries (no salt added) salt. Cover and reduce heat to med-low and simmer 5-8 more minutes, or until most liquid has been absorbed. Remove from heat and let stand 5 mins.
Preheat oven to 350 F. Coat 13×9 inch dish with cooking spray. Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Add steamed broccoli. It is okay to let some of the cheese melt. Transfer to prepared baking dish and bake 30-35 mins. Serves 8 people. Top each serving with a sprinkle of cheese. Enjoy!
