Smoked Pork Chop w Shallot & Apple sauce
Smoked Pork Chop with Shallot & Apple sauce, Smashed Garlic Potatoes, & Roasted Asparagus
Ingredients:
4 (4oz) Pork chops, trimmed
pepper, to taste
1 tsp smoked flavor (if you do not have a smoker grill)
Shallot & Apple Sauce
1 shallot, julienned sliced
1 Tbsp Smart Balance light butter
1/4 Fugi or Gala apple, julienned
1/4 cup apple cider
4 medium Russet potatoes
2 Tbsp Smart Balance light butter
2 cloves fresh garlic, chopped
1/4 cup skim milk
2 oz light cream cheese
1 bunch Asparagus, cleaned and trimmed
2 Tbsp garlic powder
1 tsp olive oil
Preparation:
Boil water for potatoes. While water is heating up, slice potatoes (with skin) into small slices or cubes. When water starts to boil, put potatoes into the water and let soak for about 10 minutes or until potatoes are soft to the touch of a fork. Leave in water on low heat.
Rub Pork chops with pepper and smoke flavor. Let sit while you heat your grill up to a medium temperature. Once grill is heated, place pork chops on the grill and cook for 9 minutes on each side or until only slightly pink in the center. While the pork chops are grilling, slice shallots and apples and place in a small sauce pan with 1 Tbsp smart balance butter. Cook for about 9 minutes. Go out and flip pork chop. Then, place apple cider into pan with apples and shallots and reduce for another 9 minutes until the sauce is a thick sauce. Pull the pork chops off the grill and let rest.
Continue with the potatoes. Drain the potatoes and add milk, cream cheese, butter, and garlic. Smash with a potato masher so the potatoes are chunky.
Wash and cut asparagus. Place into a plastic bag and shake with garlic powder and olive oil. Place on cookie sheet and broil in oven for about 5 minutes.
