Smoked Salsa Mexican Casserole
This chicken mexican casserole comes with a little kick! It serves 8 people and is approximately 315 calories of pure goodness!
Ingredients:
1 lb boneless, skinless chicken breast, sliced or shredded
1 onion, chopped
1 Tbsp minced garlic
1 zucchini, diced
1 can mexican corn
1 can pinto beans
1 can green chile enchilada sauce
2 tsp chili powder
1 tsp ground cumin
10 corn tortillas (6 inch)
1 package reduced fat mexican cheese
1 large jar (smoked flavor) salsa, medium (mild, if you don’t like your food too spicy)

Preparation:
Heat oven to 350 degrees. Sautee onion and garlic in skillet for 4-5 minutes. Add chicken breast and cook until chicken is done. Add zucchini and next 5 ingredients to skillet and heat through. Spray casserole dish and layer with 2 cups salsa first. Then top with 4 tortialls, chicken mixture, and 1 1/2 cups of mexican cheese. Continue layering until you end up with just cheese on top. Bake in oven at 350 for 20-25 minutes.
