Spicy Crab Salad
Lighten up with this delicious spicy crab salad. It is a light, refreshing, and new idea for your lunches. The easiest way to make this if you are packing it for a lunch is to put your mixed greens into a separate container from the crab topping. If you do this, your greens are sure to stay crisp and fresh!
Ingredients:
3 oz fresh lump crab meat (can also used canned-drained)
1/3 cup black beans, rinsed and drained
1/3 cup mexican corn, rinsed and drained
2 TBSP purple onion, diced
4 cherry tomatoes, halved
2 cups mixed greens
1 1/2 TBSP lime juice, fresh from lime
1/2 tsp olive oil
1/4 tsp chili powder
1 TBSP water
Serve with a side of 1 serving of baked tortilla chips or crunch the chips on top of salad for a crunch.
Preparation:
Mix together crab meat, tomatoes, beans, corn, and onion. Mix together lime juice, water, olive oil, chili powder. Top mixed greens with crab mixture. Top crab mixture with lime juice mixture. Enjoy!
If you do not like crab, you can substitute the crab for 3 oz of chicken breast.
