Super Bowl – A Light & Time Saving Menu for a party
Throw a super bowl party and keep your new years resolution going….
Millions will sit around big screen tv’s on super bowl sunday to watch the big game. If you are still following your new years resolution and trying to watch everything that goes into your mouth, try planning a healthy Super Bowl party for family and friends. Sounds like an oxy-moron, huh? Well, it definitely does not have to be. There are ways to plan (or take) healthy options to the party and no one will EVER know they are low in calories and fat.
You need to come up with a menu that will suite both guys and girls. Snack foods are always a huge go-to food at football parties. Once you figure out what types of food you want to serve to your guests, look for healthy “recipe makeovers” on the internet. The web has so many different ideas for healthy recipes these days and……
I am sending over my own Super bowl menu that has always been a huge hit with my friends. The items are simple to make, take very little time, and are DE-LISH! Enjoy!
Grilled Buffalo Chicken Skewers w Blue Cheese Dip and Veggies
1 cup hot sauce
1 lb skinless, boneless chicken breasts
4 Tbsp white vinegar
1/4 tsp cayenne pepper
1/4 tsp red pepper flakes
2 tsp powdered garlic
2 tsp Worcestershire sauce
24 metal or wooden skewers (if use wooden, make sure to soak them in water)
Clean and cut chicken breasts into 2 oz strips and skewer onto sticks. In a small bowl, mix together the hot sauce, white vinegar, cayenne pepper, red pepper flakes, garlic, and worcestershire sauce.
Preheat grill to a medium heat. Grill the skewers on both sides until cooked all the way through (approx. 3-4 minutes on each side). Baste each chicken skewer into the hot sauce mixture and place back on the grill for one minute on each side. Brush with remaining hot sauce before serving. Serve with blue cheese dip and bite sized vegetables.
Blue Cheese Dip
1 cup nonfat Greek yogurt (plain)
2 garlic cloves, chopped
2 green onion sticks, chopped
1/4 cup blue cheese, crumbled
2 Tbsp horseradish
1/4 ground black pepper
1/8 tsp cayenne pepper
Mix together all ingredients above for blue cheese dip. Serve with chicken skewers and veggies. Enjoy!
Chicken Pizza Rollups
2 containers of reduced fat crescent rolls
8 oz grilled chicken breast (seasoned with Italian seasoning)
½ pack of turkey pepperoni (cut in half)
Reduced fat sargento provolone cheese slices
1 jar of pizza sauce
Preheat the oven to the time/heat on the crescent roll container. Open up crescent rolls and pull two of the triangle rolls off the roll (the rectangle). Pinch the diagonal line together so it doesn’t break apart while cooking. Layer with ¼ slice cheese, pepperoni, chicken, then ¼ slice cheese. Fold the edges of the crescent roll to the top so that everything is inside the pocket (making it look like a wonton). Bake for the time it says on the crescent rolls. Use pizza sauce as a dipping sauce.
Veggie Pizza
2 containers of reduced fat crescent rolls
16oz of reduced fat cream cheese
1 packet of Hidden Valley Ranch dressing mix
Chopped broccoli (1 head), red/yellow peppers (1 each), matchstick carrots
Unroll crescent rolls onto cookie sheet and bake at 350 for 10 minutes. Mix the softened cream cheese and ranch dressing mix and spread onto the baked crescent rolls. Sprinkle with chopped veggies (you can use any veggies you like). Place wax paper on the top of the veggies and press into the cream cheese. Cut into little finger foods.
Redneck Caviar
2 cans black beans, drained
1 can Mexican corn, drained
1 onion, chopped
1 cup salsa
¼ cup cilantro
2 tomatoes (chopped)
1 lime
2 Tbsp red wine vinegar
2 Tbsp olive oil
3 Tbso green chilies
MIX everything together in a big bowl and serve with baked/whole grain tortilla chips.
Homemade Hummus
4 garlic cloves (I use the minced garlic out of a jar)
2 cups canned chickpeas, drained
1 ½ kosher salt
1/3 cup tahini paste (found by peanut butter or asian foods)
6 Tbsp fresh squeezed lemon juice ( 2 lemons)
2 Tbso liquid from chickpeas
8 dashes of hot sauce
Add all of the ingredients into a food processor/blender and process until pureed. Chill and serve with pita chips, carrots, tomatoes, broccoli, celery, triscuits.
*Also, you can add extra garlic or olives or red pepper or sundried tomatoes to make it a little more fancy!
Salsa-fied Sour Cream Dip
1/2 cup fat free sour cream
1/2 cup salsa
2 Tbsp chopped cilantro
1 teaspoon ground cumin
Mix together and serve with baked tortilla chips or pretzels or carrots.
Creamy Chipoltle Black bean dip
½ cup fat free sour cream
½ cup pureed black beans (or you can just smash them)
1 tsp minced chipotle peppers in adobo sauce
1 tsp adobo sauce
¼ tsp salt
Mix together and chill. Serve with tortilla chips.
Hot Crab Dip
6 ½ oz can Alaskan crab meat
8 oz pack of reduced fat cream cheese
1 Tbsp milk- (1%)
Horseradish and garlic and salt to taste
Combine all ingredients in casserole dish and bake at 375 for 15 minutes.
Mini Snicker Bites
1 snickers bar (normal size)
Athens frozen filo pastry shells (mini)
Cut snickers in half long way’s. Then cut into 10 small pieces. Put snicker piece into each shell. Put on a baking sheet and bake in the oven at 350 for 10 minutes.
Drinks…
Try the new lighter beers such as Michelob Ultra (99 calories per beer), Miller Genuine Draft (64 calories), or Budweiser Select 55. Alternate your beer with a bottle of water to help save yourself even more liquid calories.
If you would rather have liquor, mix 1 oz of a light colored liquor with soda water and add a splash of real lemon, lime, tangerine, or an orange. Trust me…..you will feel better after the game is over and the morning after the big game (especially since it is a Monday and most of us aren’t lucky enough to have the day off work!)
It all sounds so yummy that I want to throw a super bowl party just so I can eat all this! ha!
