Yummy Taco Casserole
Taco casserole is quick, easy, and last for many leftover meals! Just what I need for this busy week.
Ingredients:
15 oz whole wheat shells
2 lbs ground chicken breast (make sure it says breast)
2 packets low sodium Ortega taco seasoning (this brand has no MSG)
1 onion, chopped
16 oz fat free sour cream or plain greek yogurt
1 cup low fat mexican cheese, shredded
1 can black beans, drained
1 8 oz can tomato sauce, no salt added
1 15 oz can tomato sauce, no salt added
1 can chipotle white mexican corn, drained
Prep:
Heat oven to 350. Boil water and cook noodles according to package directions. Meanwhile, cook onion on medium heat in large skillet. Add chicken breast and brown. Add 2 cans of tomato sauce and taco seasoning and mix. Let simmer for 5 minutes. Then add beans, corn, and sour cream and mix together. Add pasta and stir. Spray casserole dish with nonstick spray and place ingredients in the dish. Bake at 350 for 20 minutes. Top with your Mexican cheese the last 5 minutes in the oven so that it melts. Top with whole grain crushed up chips. Enjoy!
** You can substitute the ground chicken breast with 96/4 lean ground beef or ground turkey breast.
** You can also add a chopped green onion to the mixture. Add it in when cooking the onions.
