Breakfast for Dinner???
Do you often crave breakfast for dinner? I know I do! If you are one of many who do, there are so many low cal options to choose from. Breakfast for dinner can be an easy way to get your lean protein, whole grain carbs, and healthy fats. There are so many different ways to be creative with “breakfast type” foods.
Here are a few of my favorites!
Potato & Egg Scramble
1 tsp Tony’s seasoning, no salt
Cooking Spray
1 cup simply potatoes
1 egg, 1 egg white
1 slice turkey bacon
2 Tbsp cheddar cheese, reduced fat and shredded
1 Tbsp ketchup, low sugar
dash hot sauce
Spray cooking spray onto cast iron skillet. Place simply potatoes on skillet on low-medium heat and cover with a pan top. Let cook for about 10 minutes or crispy to your liking. Push those potatoes to the side of the skillet and then start cooking your eggs. I like to cook mine sunny side up so that the yolk is still a little runny but the whites are cooked through. While your eggs are cooking on the low-medium heat, put your slice of bacon in the microwave for 30 seconds, until it is crispy (to your liking). When your bacon is finished, chop into tiny pieces and add to the top of your potatoes. Put the potatoes on the plate and add your eggs and sprinkle with cheddar cheese.
I like to add a dash of hot sauce and a tbsp of ketchup for flavor.
Cheesy Mexican Egg Burrito w/apple slices
1 la tortilla whole grain tortilla (81 calories)
1/3 cup morning star farm breakfast sausage crumbles
1 laughing cow cheese, mexican flavor
1 egg, 1 egg white
1 Tbsp salsa
1 Tsp fat free sour cream
1 Tbsp mexican style cheese, reduced fat
Scramble egg and egg white in skillet on medium heat. Add salsa to eggs and stir until the salsa is heated. Meanwhile, put sausage into microwave for 45 seconds. Spread laughing cow cheese onto tortilla. Mix sausage crumbles with egg mixture and put on top of tortilla. Top with sour cream and mexican cheese. Wrap it up and serve as a burrito.
Cut up a small apple into slices and serve alongside burrito. Enjoy!
Pecan, Banana, & Chocolate Waffles
2 kashi honey oat waffles
1 Tbsp walnuts or pecans, chopped
1/2 banana, sliced
4-5 dark chocolate chips on top
1/8 cup sugar free syrup (Smuckers brand tastes the best)
Sweet & Salty, Crunchy & Creamy
1/4 cup BareNaked granola & 1 light activia yogurt and 1/4 cup blueberries, blackberries, or strawberries (layer these 3 ingredients for a pretty parfait)
1 morningstar sausage patty (in your freezer aisle)
8 oz low sodium tomato juice
These look absolutely delicious and what a change from the many heavy dinners.
